Baigan ka Bartha



Ingredients:
Brinjal - 1 big sized 
Onion - 1 big (finely chopped)
Tomato - 1 big (finely chopped)
Ginger-Garlic paste - 1 1/2 tsp
Cumin Powder - 1 tsp
Red Chilli Powder - 2 tsp
Turmeric Powder - 1 tsp
Garam Masala - 1 1/2 tsp
Cumin Seeds - 1 tsp
Salt - to taste
Oil 

Method:

  • Roast the brinjal directly on low flame, until the skin gets charred evenly. (Do not roast on high flame. This would not cook the brinjal on the inside. Do not over roast it.)
  • Once done, take it off flame. Using a knife peel off the skin completely, mash the brinjal and keep aside.
  • Heat oil in a pan and add in the cumin seeds. Let it splutter.
  • Add onions, ginger-garlic paste and saute until onions turn brown.
  • Add tomatoes, salt, garam masala, turmeric powder, red chilli powder, cumin powder and mix well. Let it cook for 5 minutes.
  • Add the mashed brinjal and mis all the ingredients very well.
  • Garnish with chopped coriander and serve hot.
