"Wait a minutes... Pizza without cheese??" I can just hear you wonder in bewilderment! :D Well, yes!! This is what I would call a cheese-less pizza... (and to let you in on a secret, I had not planned it this way! :P) Here is how this happened... Yesterday I had some time on hand to kill, was bored and resorted to my favourite boredom buster... experimenting in my kitchen kingdom! :) The only thing certain in my head at this point was, I wanted to bake using yeast... the rest of the recipe just built itself as I proceeded! Ever since I baked the home made Wholewheat Pizza, I have been wanting to try making a thin-crust version of it. So, I made my yeast dough and allowed it to rise, then rolled it out real thin, planning to decorated it with some colourful toppings and cheese.... only to realise, I did not have any cheese!!! Awesome, I thought. All set to make thin crust pizza without cheese :P
I was not sure if the toppings would hold if there was no melted cheese on top, so that made me chop the thin crust into tinier bite-size pieces to ease the handling of the toppings. Hah... the things we do to modify the recipe based on the availability of ingredients! :D So, what was meant to be a traditional thin crust pizza, ended up being these little cute bite-size pizza squares with absolutely no cheese, but nevertheless delicious.
The toppings held perfectly even without melted cheese. These adorable crunchy little fellas would make great party starters. You wont feel like letting them sit around on the serving plate... and hey they are wholewheat and fat free... come on just jump into some guilt-free indulgence!! :) Oh tell me about it... the first batch disappeared before I could have a bit as I was busy keeping the second batch in the oven...! :D
Makes: 24 squares
Prep Time: 1 hr (including time for dough to rise)
Cooking Time: 30 mins
Wheat Flour - 2.5 cups
Yeast - 1/2 tbsp
Sugar - 1/2 tbsp
Oil - as needed
Water - as needed
Capsicum - 1/2 (I used red, yellow and green capsicum)
Onion - 1 medium
Red Chilli flakes - as needed
Corn kernels - 1/4 cup
Tomato Ketchup - a little
- I followed this procedure [How to make yeast dough?] to prepare the yeast dough, only that I used only wheat flour and no all purpose flour. Just replace the 1/2 cup of all purpose flour with 1/2 cup of wheat flour and proceed with the recipe as is.
- While the yeast dough rises, chop all the veggies and keep aside.
- After an hour the dough would have doubled. Half it into two balls.
- Preheat the oven to 180 degrees.
- Dust the work floor with a bit of flour and toss one ball on it.
- Knead for a minute and then roll it out into a thin rectangle. (slightly thicker than a chapathi).
- Using a knife, slice the rectangle into smaller squares (don't bother in the exact shape and size here :) )
- Transfer the squares onto a greased plate and smear tomato ketchup evenly.
- Spread out the chopped veggies over this, gently press them in a little and sprinkles some red chilli flakes.
- Bake for 6-7 minutes or until the little fellows turn slightly brown on the sides.
- Take off the oven and allow to cool for about a minute or two. Then gobble them up :D
