Its been more than a month since I spent some time here. Life has been keeping me busy and once there is a break, its hard for me to get back on track. Sigh!
So, I was just waiting for that one recipe that I was hoping to bump into which would urge me to simply make some time and blog about! Something that is irresistibly yum and which cannot wait to be shared with the world! And... my hunt ended with this deliciously soft and YUM savoury buns flavoured with mint, coriander and roasted onions.
The originator of this recipe is one of my college friends who also happens to be an awesome home baker. She has recently been posting pictures of some real yummy stuff she has baked and this one interesting bread caught my attention. The combination of ingredients that went into it fancied me and I simply had to try it out in my own little bakery!
The only variation that I did was to shape them into buns and oh my, did I love them?! Yes yes oh YES! :)
The little bit of cheese that goes into it, gives it an enjoyable flavour and softness. Well, this recipe is so simple and fun to work on, that it definitely is a keeper. These adorable guys are so photogenic that I enjoyed clicking these pictures! Cute, aren't they? :)
Makes: 7-8 buns
All Purpose Flour / Maida - 2.5 cups
Instant Yeast - 2 tsp
Sugar - 2 tbsp
Onion - 1, finely chopped
Coriander - 1/4 cup, finely chopped
Mint - 1/4 cup, finely chopped
Cheddar Cheese - 1/4 cup, grated
Cheddar Cheese - 1/4 cup, grated
Salt - to taste
Olive Oil - 1 tbsp
Water - 2 cups OR as required.
Milk - a little
- In a pan, drizzle a little oil and toss in the finely chopped onions. Saute for a few minutes until they turn lightly brown. Take off the stove and keep aside.
- Mix together the yeast, sugar and 1/2 cup of mildly warm water. Keep aside for a few minutes until the solution froths up. Now, the yeast solution is ready to use.
- In a large mixing bowl, combine the flour, chopped coriander, chopped mint, grated cheese, caramelised onions, salt and the yeast solution.
- Add some more water, if needed to make a soft and slightly sticky dough.
Tip: You can add in potato water to enhance the soft texture of the bread. Put one potato in a vessel containing 1 cup of water and bring to a boil. Keep aside the potato and use the water to knead the dough.
- Grease the bowl with olive oil and place the dough ball in it and keep aside for about an hour to proof. At the end of an hour, the dough would have doubled in size.
- Punch the dough ball to take off any air bubbles. Divide the dough ball into smaller balls and shape into buns.
- Place these dough balls on a well greased baking tray. Keep aside for 15-20 minutes to allow them to puff up a little more.
- Preheat the oven to 170 degrees C.
- Bake the buns for 10 minutes or until the crust turns golden brown. *Mine got done in 6 minutes!
- Take them out of the oven and brush them with milk to give the buns a soft, pillowy texture.
These awesome savoury buns are super soft and flavourful that you could gobble them up as is. But just slice them in half and slather on some butter in the center and take a bite.... you will be transported to heaven of yumminess!!! :)
